A month of salads- Week Four
* Taco Salad
* Jalapeno Cornbread
* Sopapilla Cupcake
A good hearty taco salad is the best way to get my family to eat well. Salad greens are topped with a taco mixture of lean beef and turkey mix, dark kidney beans, tomato sauce, seasonings, onions, and peppers. Then to finish the salad is some green onions, cheddar, light sour cream, and diced avocados. On the side is cornbread filled with peppers and onions, but not too spicy. And for dessert is my version of a Sopapilla Cupcake which is a cinnamon cupcake with a honey cinnamon frosting.
